Za'atar Rub
The bright, herby, tangy blend built on thyme and sumac. Best on chicken, lamb, and smoked vegetables.

Ingredients

- 3 tbspdried thyme
- 2 tbsptoasted sesame seeds
- 1 tbspsumac
- 1 tspkosher salt
- 1 tspdried oregano
Method
1.Mix the rub
Combine and store airtight. Sumac is the sour note that makes it sing — don't skip it.
2.Apply and cook
Rub on chicken thighs before grilling, or toss with olive oil and roasted vegetables. Also great over labneh or feta.
