Yakitori Tare

The soy glaze off Japanese grilled skewers. Salty-sweet, glossy, reduced down to a syrup. Builds character if you keep a jar going and reuse it.

  • 0.5 cupsoy sauce
  • 0.5 cupmirin
  • 0.3 cupsake
  • 2 tbspsugar
  • 1 clovegarlic, smashed
  • 1 sliceginger

Method

  1. 1.Combine

    Combine everything in a small saucepan.

  2. 2.Reduce

    Simmer and reduce by about a third until it coats a spoon, roughly 15 minutes.

  3. 3.Strain

    Strain out the garlic and ginger. Brush on in the last few minutes, then again right off the heat.
