Vietnamese Lemongrass

  • 3 stalks lemongrass, minced fine
  • 3 tbsp fish sauce
  • 2 tbsp brown or palm sugar
  • 1 tbsp soy sauce
  • 2 tbsp neutral oil
  • 4 garlic cloves, minced
  • 1 shallot, minced
  • 1 tsp black pepper

Method

  1. 1.Mix the marinade

    Combine everything in a bowl — the sugar can take a minute to dissolve into the fish sauce.

  2. 2.Marinate and char

    Marinate 3 to 8 hours. Pat dry, then cook hot enough for the sugar to caramelize into those dark, sweet char marks.
