Vietnamese Lemongrass
The marinade behind grilled pork over rice noodles. Sweet, funky, aromatic, and it chars into something addictive. Best on pork shoulder, pork chops, and chicken.

- 3 stalks lemongrass, minced fine
- 3 tbsp fish sauce
- 2 tbsp brown or palm sugar
- 1 tbsp soy sauce
- 2 tbsp neutral oil
- 4 garlic cloves, minced
- 1 shallot, minced
- 1 tsp black pepper
Method
1.Mix the marinade
Combine everything in a bowl — the sugar can take a minute to dissolve into the fish sauce.
2.Marinate and char
Marinate 3 to 8 hours. Pat dry, then cook hot enough for the sugar to caramelize into those dark, sweet char marks.
