Thai Lemongrass Rub

Bright and aromatic, lemongrass and coriander leading. Pairs with the Satay Peanut sauce. Best on chicken and pork.

  • 2 tbspground coriander
  • 1 tbspground dried lemongrass
  • 1 tbspbrown sugar
  • 2 tspkosher salt
  • 1 tspwhite pepper
  • 1 tspgarlic powder
  • 1 tspground ginger
  • 1 tspturmeric

Method

  1. 1.Mix the rub

    Combine and store airtight. Dried lemongrass grinds fine in a spice mill if you can only source the stalks — dry them fully first.

  2. 2.Apply and cook

    Rub on chicken thighs or pork shoulder, rest at least an hour, then grill or smoke. Serve with satay peanut sauce.
