Thai Gai Yang
Street-cart chicken that eats like restaurant food. Loads of white pepper, garlic, and cilantro root. Best on chicken, especially bone-in thighs.
Ingredients

- 3 tbsp fish sauce
- 2 tbsp oyster sauce
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp white pepper
- 4 garlic cloves
- 3 cilantro roots (or a small handful of stems)
- 1 tbsp oil
Method
1.Blend into a paste
Blend all ingredients into a rough paste. If you have cilantro roots, use them — the flavor is deeper than stems.
2.Marinate and grill
Coat the chicken and marinate 3 to 12 hours. That much white pepper looks wrong and tastes exactly right.
