Peruvian Pollo Rub

The cumin-and-paprika base under Peruvian rotisserie chicken. Pairs with Aji Verde. Best on whole chicken and thighs.

  • 1 tbspground cumin
  • 1 tbspsmoked paprika
  • 1 tbspgarlic powder
  • 2 tspkosher salt
  • 2 tspaji amarillo powder
  • 1 tspdried oregano
  • 1 tspblack pepper

Method

  1. 1.Mix the rub

    Mix and store. If you can't find aji amarillo powder, substitute 1 tsp cayenne plus a pinch of turmeric for color.

  2. 2.Apply and cook

    Rub under the skin as well as over it. Best after an hour of rest, or overnight for deeper flavor.
