Peri-Peri Dry Rub

The dry counterpart to the sauce, smoky and hot. Pairs with the Peri-Peri sauce. Best on chicken.

  • 2 tbspsmoked paprika
  • 1 tbspcayenne
  • 1 tbspgarlic powder
  • 1 tbspkosher salt
  • 1 tspdried oregano
  • 1 tspblack pepper
  • 1 tsponion powder
  • 0.5 tspground ginger

Method

  1. 1.Mix the rub

    Combine and store airtight. Adjust the cayenne to your heat tolerance.

  2. 2.Apply and cook

    Rub a whole bird the night before, then finish with the wet peri-peri sauce during the last part of the cook for a double hit.
