Monkeygland Sauce

  • 1onion, finely diced
  • 2 clovesgarlic, minced
  • 1 cuptomato sauce or passata
  • 0.3 cupfruit chutney (mango or apricot)
  • 2 tbspWorcestershire
  • 2 tbsptomato ketchup
  • 1 tbspcider vinegar
  • 1 tbspbrown sugar
  • 1 tspmustard powder
  • hot sauce

Method

  1. 1.Sweat aromatics

    Soften the onion and garlic in a little oil until translucent.

  2. 2.Simmer

    Add everything else and simmer 15 minutes until thick and jammy.

  3. 3.Serve

    Serve warm over grilled beef.
