Korean chili flake heat with a touch of sweet. Pairs with the Ssamjang Glaze and plays right into fermented flavors. Best on pork belly and short ribs.

  • 2 tbspgochugaru
  • 1 tbspbrown sugar
  • 1 tbspkosher salt
  • 1 tbspgarlic powder
  • 1 tspground ginger
  • 1 tsptoasted sesame seeds
  • 1 tspblack pepper

Method

  1. 1.Mix the rub

    Combine and store airtight. Gochugaru is more fragrant than hot, so don't be shy with it.

  2. 2.Apply and cook

    Massage into pork belly or short ribs, let it rest at least an hour, then smoke or grill hot.
