The sweet-savory workhorse of American barbecue. If you only ever make one rub, make this one. Pairs with Kansas City Classic sauce. Best on pork ribs, chicken, and pulled pork.

  • 2 tbspbrown sugar
  • 2 tbspkosher salt
  • 1 tbspblack pepper
  • 1 tbspgarlic powder
  • 1 tbsponion powder
  • 1 tspcayenne
  • 1 tspground mustard

Method

  1. 1.Mix the rub

    Combine everything in a bowl, whisk until uniform, and store airtight.

  2. 2.Apply and cook

    This one carries enough sugar that you want to run your pit under 275°F or the bark can turn bitter. Apply generously, let it tack up for at least 30 minutes, then smoke.
