Japanese Shichimi Rub
Seven-spice heat with citrus and sesame behind it. Pairs with Yakitori Tare. Best on chicken and pork.

- 2 tbspshichimi togarashi
- 1 tbspkosher salt
- 1 tspsugar
- 1 tspgarlic powder
Method
1.Mix the rub
Combine and store airtight. If you can't find shichimi, build a stand-in from 1 tbsp chili flakes, 1 tsp dried orange peel, 1 tsp sesame seeds, 1/2 tsp poppy seeds, and a crumbled sheet of nori. A little black pepper with a scrape of lemon zest approximates the sansho note.
2.Apply and cook
Dust chicken thighs before grilling over binchotan or a hot grill; finish with yakitori tare.
