Cuban Mojo Marinade
The overnight version of mojo, built to soak deep into a pork shoulder. Pairs with the Latin adobo rub. Best on pork shoulder and pork loin.
Ingredients

- 3/4 cup sour orange juice (or 1/2 cup orange + 1/4 cup lime)
- 8 garlic cloves, mashed
- 1/3 cup olive oil
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp salt
Method
1.Mix the marinade
Combine everything in a bowl. Let it sit 10 minutes so the garlic mellows.
2.Marinate and serve
Marinate pork 8 to 24 hours. Make a fresh batch of mojo to serve at the table — never reuse marinade that has touched raw meat without hard-boiling it first.
