Cuban Mojo
Garlic and sour citrus, warm with cumin and oregano. Traditional over slow-roasted pork, which makes it a natural for a smoked shoulder.

- 0.8 cupsour orange juice (or 1/2 cup orange + 1/4 cup lime)
- 8 clovesgarlic, mashed to a paste
- 0.5 cupolive oil
- 1 tspground cumin
- 1 tspdried oregano
- 0.5 tspsalt
Method
1.Bloom garlic
Warm the oil in a small pan, add the garlic, and cook 30 seconds until fragrant. Don't brown it.
2.Add spices
Pull off the heat and stir in the cumin and oregano.
3.Finish
Whisk in the citrus and salt. It'll sputter. Cool before using.
