Chimichurri
The great Argentine grill sauce. Raw, herby, garlicky, sharp with vinegar. It exists to cut the richness of smoked beef.

Ingredients

- 1 cupflat-leaf parsley, finely chopped
- 4 clovesgarlic, minced
- 2 tbspfresh oregano (or 2 tsp dried)
- 0.5 cupolive oil
- 2 tbspred wine vinegar
- 1 tspred pepper flakes
- 0.5 tspsalt
Method
1.Combine
Stir everything together by hand. Don't blend it smooth, you want texture.
2.Rest
Let it rest at least 30 minutes so the garlic and oregano bloom into the oil.
3.Serve
Spoon over sliced beef right before eating.
