Baharat
The Levantine all-spice blend, deep and a little sweet with warm baking spices. Pairs with Toum and Zhoug. Best on beef and lamb. Salt-free — add salt when you use it.

- 2 tbspblack pepper
- 1 tbspground cumin
- 1 tbspground coriander
- 2 tspcinnamon
- 2 tsppaprika
- 1 tspground cloves
- 1 tspground cardamom
- 1 tspground nutmeg
Method
1.Mix the rub
Mix in a bowl and store airtight. A little goes a long way on beef.
2.Apply and cook
Salt the meat separately, then apply a light-to-moderate dusting of baharat before cooking. Excellent on kofta and lamb chops.
