Peruvian Anticucho

The aji panca marinade off the grills of Lima — smoky and deep red. Pairs with aji verde and the Peruvian pollo rub. Best on beef skewers and beef heart.

  • 3 tbsp aji panca paste (or ancho chili paste)
  • 1/4 cup red wine vinegar
  • 4 garlic cloves
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 2 tbsp oil
  • 1 tsp salt

Method

  1. 1.Blend the marinade

    Blend everything smooth.

  2. 2.Marinate and skewer

    Marinate 4 to 12 hours. Skewer and grill hot and fast.
