Aji Verde

- 2jalapeños (or 2 tbsp aji amarillo paste), seeded
- 1 cupcilantro, packed
- 2 clovesgarlic
- 0.3 cupmayonnaise
- 2 tbspcotija or parmesan
- 1 tbsplime juice
- 2 tbspolive oil
- 0.5 tspsalt
Method
1.Blend
Blend everything until smooth and pale green.
2.Adjust
Add a splash of water if it's too thick to pour.
3.Chill
Chill. It's better after an hour.
