  • 2jalapeños (or 2 tbsp aji amarillo paste), seeded
  • 1 cupcilantro, packed
  • 2 clovesgarlic
  • 0.3 cupmayonnaise
  • 2 tbspcotija or parmesan
  • 1 tbsplime juice
  • 2 tbspolive oil
  • 0.5 tspsalt

Method

  1. 1.Blend

    Blend everything until smooth and pale green.

  2. 2.Adjust

    Add a splash of water if it's too thick to pour.

  3. 3.Chill

    Chill. It's better after an hour.
