Table Sauce
Central Texas Beef Sauce
Tomato · Central Texas · about 2 cups · 25 minutes
Thin, savory, and peppery. Texas brisket joints serve it on the side, and plenty of pitmasters won't serve it at all.

Heat Sweetness
Ingredients
- 2 tablespoons butter
- 1/2 small onion, finely minced
- 2 garlic cloves, minced
- 1 cup ketchup
- 1/2 cup beef stock or reserved brisket drippings
- 1/3 cup apple cider vinegar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon brown sugar
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon coarse black pepper
- 1/2 teaspoon kosher salt
- Juice of 1/2 lemon
Method
- 1.Melt the butter over medium heat and cook the onion 5 minutes until soft.
- 2.Add the garlic and cook 1 minute.
- 3.Stir in everything except the lemon juice and simmer 15 minutes.
- 4.Stir in the lemon juice. Strain for a smooth sauce or leave it rustic.
Storage
Refrigerate up to 1 week if made with drippings, 2 weeks with stock.
